Description: With its exquisite tastes, numerous health benefits, and delightfully artistic presentation, sushi has grown to become one of the most prominent favorites in the North American dining experience. However, due to its deep rooted foreign origins and its structural complexity, the art of sushi creation has proven itself to be an incredibly difficult task for the inexperienced sushi enthusiast.
Now for the first time ever, world renown sushi chef and restaurant owner Hayashi Ken successfully eliminates these barriers by developing this incredible sushi resource -- guaranteed to teach any sushi novice how to create restaurant quality sushi in the comfort of their own home!
Ken Sushi Video: Volume 1 simplifies the process of making sushi, sashimi and maki by providing explicitly thorough explanations of the following:
- all the ingredients needed for each dish and where / how to get them - each step of preparation (from start to finish) in immaculate detail - cutting techniques, crucial health and safety information (i.e. handling of raw fish)
The Ken Sushi Video collection is a tribute to Master Ken's passion for sushi and his dedication to teaching the tips and secrets that comprise this culinary art. To everyone interested in perfecting their sushi creation techniques, Hayashi Ken sincerely hopes that this video resource provides you with both the enjoyment and experience that he has attained over the years as both a sushi chef and connoisseur. Good Video Ken is a little hard to understand, but the video is great, I can't wait to start making some Sushi. Everthing you need to know is there.
Packed with Quality information First of all, I am not a video producer so can not speak to the quality of this DVD other than from a viewer perspective. In my mind...it is clear and crisp and Ken is easily understood. I know one rater said the quality of the video was in question...I did not see that.
You will like Ken immediately. He is just one of those folks you know you would like. He speaks very clearly and slowly. I watched the video the first time just for pleasure and the second time I took a few notes. Jotted down Ken's recipe for sushi rice and etc.
Armed with this video and a book such as the excellent "The Complete Book of Sushi" by Hideo Dekura, Brigid Treloar, and Ryuichi Yoshii. I can guarantee you will be well on your way to your first rolls or your first Nigiri sushi. One thing I would do before rolling your own though is to stop by a sushi bar and sit right in front of the chef. Watch him and enjoy a nice lunch or dinner. You will build confidence just watching him prepare the food.
The video covers a lot of stuff in a short time. (one hour) but it is well worth the spend.
The only thing I wish Ken would have shared was his recipe for spicy sauce. Guess I will have to go to Canada and ask for it. :)
Ken also discusses types of fishes and seafood, how to care for it, how to slice it, where to get it and etc.
You will enjoy this video (watch the bloopers at the end...it will confirm Ken's sense of humor)
Ken Sushi Video Volume 1 The video is great, it really help with my sushi parties. My wife is very happy with my improvings in roll making. For sure is a good purchase. Besides sushi making techniques there are few tips on cutting and handling bacteria, which are very helpful
That's it! Beginners guide to Sushi making Well, I liked it a lot. It gave me all the information on how to prepare the fish and how to work with knife. The greatest takeaways however are the receipe for vinegard and wasabi - it is excellent! Being only an amateur with limited access to fresh fish, I would like to get more hints on how to handle frozen fish - what to look for when you are buying it and how to properly defrost it so it tastes best. Ken is so fast that it is hardly possible to see exactly how he prepares nigiri. But you will get it ultimelty :-) I also got a book by Kimiko Barber entitled "sushi - taste and technique", but get the DVD only if you are a beginner. The book is not necessary in that case.
